Black Bean & Couscous Salad

Black Bean & Couscous Salad
This is Couscous (just in case some of you were unsure)


Ingredients:
1 1/4 cups of Organic Vegetable broth
1 cup of Organic Couscous
3 Tbsp Organic extra virgin olive oil
2 Tbsp Fresh lime juice
1 tsp Organic red wine vinegar
1/2 tsp ground cumin
8 green onions, chopped
1 Red Bell Pepper, seeded and chopped
1/4 cup Fresh Organic cilantro
1 cup of frozen organic corn kernels, thawed
2 cans of Organic Black Beans, drained
Sea Salt to taste

Directions:
Bring veggie broth to a boil in a large saucepan  and stir in the coucous. Cover the pot and remove from heat. Let stand for 5 minutes. In a large bowl, whisk together the olive oil, lime juice, vinegar, and cumin. Add green onions, red pepper, cilantro, corn and beans and toss to coat. Fluff the couscous well, breaking up any chunks. Add to bowl with the veggies and mix well. Season with salt and serve at once or refrigerate until ready to serve.
