Milled Flaxseed
Milled Flaxseed allows you the benefit of Plant derived Omegas needed (especially for those who do not eat fish on a regular basis). It is packed full of fiber and is a natural fat binder (due to its fibrous properties).
Recipe:
1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1 cup cream
- 1/4 cup vegetable oil
- 1/4 cup honey
- 1/4 cup of milled flaxseed
- 2 eggs, lightly beaten
- Preheat oven to 400 degrees. Place liners in 12 cup muffin pan.
- In a large bowl, stir together flour, cornmeal, flaxseed, sugar and baking powder. Make a well in the center of the dry ingredients. Add the cream, oil, honey and eggs; stir to combine. Pour batter into muffin pan.
- Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of pan comes out clean.
* These honey cornbread muffins do not last in my home...Enjoy, Buen Provecho !
