Day 7 Experience... Doing Good as a Vegan
Day 7..... of my challenge. It has not been so bad. I have been enjoying different recipes from couscous to lentil soup and some cinnamony apples. I have not been hungry at all. I have kept myself full with periodic meals every 3-4 hours. I feel good and light. I have lost about 3 lbs so far. I thought I was going to miss meat or chicken.... not really. I believe I can live without eating meat or poultry on a weekly basis.
I did do a lot of thinking before I grabbed something to eat. I had to ask myself, "Am I really hungry or am I just eating out of boredom or because of socialization." With this particular question, I was able to target my motive for eating. There were a few occasions I had to put stuff back. It was an eye opener and I feel like I have gained more self control in this area. After all, God does call us to exercise the "Fruit of the Spirit," Galatians 5:22-23....One of which is Self control. I wonder how many times we give in to this area of our lives. Instead of exercising the authority God has given us, we fall slave to the habitual choices made daily. I encourage you to become aware of your decisions not only in regards to the food choices, but spiritual choices in your walk with Christ. Take sometime for prayer and see the areas God is speaking to you about.
I realize that as I am ministering to my body with healthy foods; at the same time, God is ministering to me, teaching me his ways and the goodness I deserve.

Organic Baby Spinach, Cucumber & Couscous Salad
Organic Baby Spinach & Couscous Cucumber Salad Ingredients: Handful of Organic Baby Spinach 1 Freshly Shredded Organic Carrot 1/2 Organic Cucumber, sliced 1/4 cup of Organic Couscous 1 tbsp of Newman's Own Light Balsamic Vinaigrette Place baby spinach, shredded carrots, sliced cucumbers in a bowl. Fight against the Afternoon Sleepiness AnyWhere!!

Ever feel like this in the afternoon... You could just fall asleep anywhere... lol. I think everyone has.
The reason your body is behaving this way is due to is insufficiency in vitamins and minerals. A balanced diet, exercise, and adequate rest is the key to avoid the slump. However, many of you (including myself sometimes) just can’t seem to get all three. This is due to work or other obligations.
What should you do? Reach for an energy drink..... No Of course NOT.. BAD BAD...
( I say this, because I was a Energy drink junkie and would have at least two a day). This would result in a drop in my energy after the affects wore off. So I can understand your desire to reach for one.
Reach for some fruits and veggies to help with that afternoon drag. Your bodies are in need of some good vitamins and nutrients. Here are some ideas

Organic Fruits:
Apples, Apricots, Blueberries, Oranges, Tangerines, Peaches, Plums etc..
.....any fruit will do. Stick with Organic though, get the most for your bucks
Organic Vegetables:
Carrots, Celery, Raw Broccoli, Baby Spinach with tomatoes and cucumbers, artichokes
.....etc.. any vegetable will do.. of course Organic
Here is a tip: I know that in the afternoon some of you may not want to eat a fruit or a veggie, but fight against that.. Change will not happen if you do not make changes in your choices... You will reap the benefits of your decisions. You will see that you have more energy to do things. JUST DO IT

Organic Pumpkin Pie!!
OOooooooOOOOO Mama, loves me some Pumpkin Pie !!
Okay, so we are approaching Thanksgiving soon...... Wouldn't you like some Pumpkin Pie...Of course you do. Well, I wanted to share a favorite recipe of mine.

Canned Organic Pumpkin This is my favorite brand for pumpkin pie. I use this in other things as well, like my beans and pasta sauces for added nutrition. It does not alter the flavor.. It actually enhances the flavor and thickness of the sauce. Ingredients: 2 cups of organic canned pumpkin puree 1 1/2 cup of organic heavy cream or 1 12 oz. can of organic evaporated milk 1/2 cup packed organic brown sugar 1/3 cup organic white sugar (organic beet sugar opt) 1/2 tsp of sea salt 2 Organic eggs plus yolk of a third egg 2 tsp organic cinnamon 1 tsp of organic ground ginger 1/4 tsp of organic ground nutmeg 1/4 tsp of organic ground cloves 1/2 tsp of organic lemon zest 1 good crust Preheat oven to 425°F, Mix sugars , salt,spices, and lemon zest in a large bowl. Beat the eggs and add to the bowl. Stir in pumpkin puree. Stir in cream. Whisk all together until well mixed. Then pour into pie shell and bake for 15 minutes. After 15 minutes reduce oven temp to350°F . Bake 40-50 minutes , or until a knife inserted near center comes out squeaky clean. Cool for about 2 hours ..... I know 2 hours dang it I wanted to eat it now... You can't it will still be Mushy!... Okay well good things come to those who wait.. So wait and you will enjoy yourself a nice slice of P-U-M-P-K-I-N P-I-E. |

For instance, take the tomato; it is picked prior to ripeness then ripen by spraying carbon monoxide on them. Okay that one may not sound too bad.
