Ingredients:
1/2 cup Sliced Green Bell Peppers
1/2 cup Sliced Yellow Onions
1/2 cup of Diced tomatoes
1 Tbsp of Minced Green Onions 1/2 cup of Shredded Mozzarella Cheese(Optional) 2 Multigrain Tortillas 1 tsp Sea Salt 2 tsp of Olive Oil
Let us Begin Place bell peppers and onions in sauce pan with 2 teaspoons of olive oil to sautee.
Add tomatoes towards the end of the sauteing. While sauteing veggies, crisps the tortillas on a flat pan. Crisp it to your desire.
Then remove the Tortilla and top it off with your sauteed veggies, sprinkle the sea salt... Yummy! For the Semi Vegan's: add the Mozz Cheese at the end and it will melt to perfection.
Quick and Easy Lunch or Dinner. Time:10 minutes
