Mucho Amor, Pollo with Sofrito baste

My Pretty Whole Chicken, It was Yummy tooo!!


Ingredients:
Thawed Whole Chicken
Sweet Corn on the cob
1 cup of Broccoli
5-6 Red Potatoes
1 Purple Onion
1 Yellow Bell Pepper
1/2 cup of Sofrito
1 Tbsp Sea Salt
Oregano
1 Tbsp of Garlic Salt
1/4 cup of Orange Juice
1/4 cup Apple Cider Vinegar

Just another view for ya!


Preheat oven 375, Combine vinegar, oj, sofrito, garlic salt, sea salt, and mix them.  Take your chicken and poke holes in the chicken through out the breast and legs. Place in oven pan and baste with your mix. Add a little of water to the mix to make it spread easy to baste. Cut up about 2 red potatoes and onions,  place in the same oven pan with chicken. Cover with Aluminum foil and place in oven for about 2 hrs.. Return about 1 hr 1/2 to baste with the mix, pour over chicken to keep moist. Then remove the aluminum foil to allow the chicken to roast..

Roasted Broccoli, Red Potatoes, Yellow Bell Peppers

Cut up the remaining veggies and place in a pan to roast, You will want to do this towards the end of your  chicken  tanning session. Then remove Chicken and cover. Then broil your veggies to toast them... only for a few minutes or they will become to crispy. 

Sweet Corn on the Cob

Of course, the sweet corn cobs, place them in aluminum foil or a pan and cover. Leave in the oven with the chicken for about 30 minutes... You can put  some butter on them if you like prior to placing them in the pan. Your choice, they are sweet enough for me so no need.

I made this for dinner last night and everyone loved it!!!! It was like a mini thanksgiving meal, heheheehe
* You will have leftovers for a day or two... depends. These whole chickens are affordable, they come in a 2 pack from BJ's for about $8.00 or $9.00... save some money too.. Woo Hoo

Cinnamony Organic Apples


Organic Red Apples

I chose organic apples because, I eat the whole apple... I do not peel it. All the Fiber is in the skin. In addition,  regular apples contain high levels of chemicals and pesticides.... It is part of the dirty dozen. So I always get organic apples. Much tastier and sweet this way anyway!



Raw Shredded Almonds


Ingredients:

1/4 cup of raw shredded almonds
1 tsp of butter
2 tsp of cinnamon
pinch of sea salt
1 organic apple

Get a sauce pan, and place tsp of butter to melt in pan with medium low heat. Once the butter is melted, cut apple into small squares. Place them in the saucepan and allow to cook for 5 minutes with the occasional stir.





Add cinnamon and sprinkle the sea salt, add almond at the end and mix with apples.. Allow to cook for another 2-3 minutes. Once slight browning occurs , remove and enjoy.

*  The protein and fiber in this dessert or snack will keep you satisfied for a while.. Great breakfast as well..

Let it Rollllll, Lasagna a la Vegan or not


Lasagna Rolls with Spinach


Very Different than Traditional Lasagna, Although it still has same qualities..



Ingredients:
Salt 
1/2 pound (8 to 10) uncooked lasagna noodles 
Nonstick cooking spray 
1 cup ricotta cheese 
1 1/2 cups prepared marinara sauce 
1 1/2 cups packed baby spinach 
1/2 cup shredded mozzarella
Opt( ground Turkey)

Preheat oven to 400°F. Meanwhile, bring a large pot of salted water to a boil, add noodles and cook until al dente, 8 to 10 minutes. Drain well and gently transfer to a clean work surface. 

Grease a small roasting pan or casserole dish with cooking spray; set aside. Working with one noodle at a time, spread with about 2 tablespoons of the ricotta and 2 tablespoons of the marinara then top with spinach. Starting at one end, roll up noodle snugly then arrange in pan either seam-side down or with the rolls close enough together to hold each other closed. Pour remaining marinara over assembled rolls then sprinkle with mozzarella and bake until golden and bubbly, 20 to 25 minutes.

These are the best. This can become a carnivorous entree, just add ground turkey with the marinara...

Honey Cornbread,"A'int nothing wrong with that!"

Cornbread, "A'int nothing wrong with that."

Some of the ingredients I use:
Best Honey Ever!

Raw Honey is better than regular honey you find in stores( can find them in Health stores like Paradise or Farmer's Markets), When honey is cooked almost all the antioxidants are removed during the heating process. Raw Honey allows you the health benefits your body needs. Did you know raw honey is the best cough medicine, and it soothes an achy throat ..just side note for ya.
Milled Flaxseed

Milled Flaxseed allows you the benefit of Plant derived Omegas needed (especially for those who do not eat fish on a regular basis). It is packed full of fiber and is a natural fat binder (due to its fibrous properties).


Recipe:
1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 cup cream
  • 1/4 cup vegetable oil
  • 1/4 cup honey
  • 1/4 cup of milled flaxseed 
  • 2 eggs, lightly beaten

  • Preheat oven to 400 degrees. Place liners in 12 cup muffin pan.
  • In a large bowl, stir together flour, cornmeal, flaxseed, sugar and baking powder. Make a well in the center of the dry ingredients. Add the cream, oil, honey and eggs; stir to combine. Pour batter into muffin pan.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of pan comes out clean.






* These honey cornbread muffins do not last in my home...Enjoy, Buen Provecho !

Apple Sandwiches, Yummy Fiber and Protein

Apple Sandwiches with Granola and Peanut butter




2 Small Apples, cored and cut crosswise into 1/2-inch thick rounds
1 teaspoon lemon juice (optional)
3 tablespoons peanut or almond butter
2 tablespoons semisweet chocolate chips
3 tablespoons granola
Yummy Snack!!! I think they look cute too! 
Great alternative to junk food snacks, and it has chocolate  chips

Peach Salsa, Mi Favorito

Peach Salsa, My favorite!!!!
I can eat this for Breakfast, Lunch or Dinner

1 Peach
1/2 onion
Handful of Cilantro
1 Tomato
1 Tbsp of Lemon Juice
Pinch of Sea Salt
Pinch of Garlic Salt
Corn Tortilla Chips


Dice all peaches, onions, tomato, cilantro and place in a stylish bowl
Yes, I said stylish....so that it is special time,
Then add lemon juice, sea salt, and garlic salt...just sprinkles of the two salts.
Mix ingredients together
Let it sit for a little so that the juices begin to mix, not too long..
because salt draws out the water from the tomatoes, then it will be too watery...
Eat with a serving of Corn tortillas and Yummy enjoy.

*This Salsa can top off grilled chicken or place in a sandwich

Oatmeal at It's Best

Oatmeal at it's Best!!!

1 1/2 cup of Organic Almond Milk
1/2 cup of Quick Oats(or steel cut oats)
1/2 cup of diced and peeled Apples
2 Tbsp of Honey
1/4 Tsp Ground Cinnamon
1 Pinch of Ground Nutmeg
1 Pinch of Sea Salt

Combine almond milk, sea salt, cinnamon, nutmeg in a pot.
Bring to a slight boil then pour in oats* and constantly stir and add honey.
Apples to top it off, Mmmmm

*steel cut oats take longer to cook, so temp should be med low.
(Opt) Replace almond milk with Apple juice and remove honey, for a sweeter Oatmeal

This is a non dairy version of Oatmeal..I did not use soy milk, due to allergy to Soy in my household                  ( I do not like soy milk). Kids loved it!!

Spinach Lentil Soup , Oh so good

Spinach Lentil Soup


  • 1/3 cup uncooked white rice
  • 2/3 cup water
  • 1 teaspoon vegetable oil
  • 4 ounces turkey sausage, chopped
  • 1 onion, minced
  • 1 carrot, chopped
  • 1/2 teaspoon crushed red pepper flakes
  • 6 cups water
  • 2 cups reduced sodium chicken broth
  • 1 cup dry lentils
  • 1 bag of Spinach
Lentils


  • In a pot, bring the rice and water to a boil. Reduce heat to low, cover, and simmer 20 minutes.
  • Heat the oil in a large pot over medium heat, and cook the turkey sausage, until lightly browned. Mix in onion and carrot, and season with red pepper. Cook and stir until tender. Pour in the water and broth, and mix in lentils. Bring to a boil, reduce heat to low, and simmer 25 minutes.
  • Stir the cooked rice and spinach into the soup, and continue cooking 5 minutes before serving.

Stuffed COW, Mooooooooo (Stuffed Steak Cutlets)

                                                
Stuffed Steak with Sauteed Potatoes and Corn


Ingredients:
1 Green Bell Pepper
1/2 cup minced onions
2 Roma tomatoes
1/2 cup shredded Mozzarella
1Tbsp Oregano
2 Tsp Sea Salt
Garlic and Onion Powder
1 Tsp Paprika
1Tbsp Olive Oil
1 can of Corn
3 diced Potatoes
8 Steak Cutlets


Let us Begin
Sautee Green Peppers and Onions First

Sautee Tomatoes last

Steamed Potatoes(about 7-8 min)
  After the removal of tomatoes, sautee steamed potatoes, season with Oregano,
Sea Salt, Paprika, onion and garlic powder

Canned Corn and be heated in pan or microwave(not fond of Microwave, but ok)
After Sauteing bell peppers, onions and tomatoes, Season meat with Sea Salt and sprinkle with onion and garlic powder.
Put veggies almost centered on the cutlet and sprinkle mozzarella , then roll up.


Rolled up, Yummy

Pan must be heated to low medium, then coat pan with olive oil .
Place fold side down to seal the rolled steak ( opt: tooth picks or cooking thread to hold tight)
Flip side to cook evenly! Viola ! Your done after about 15 minutes

It was Good !



*Of course any of these veggies can be substituted to your taste, I prefer more greener veggies; however, my family wanted a break from them for dinner.

Vegan Pizza or Not, It Depends

Semi Vegan Pizza Tortilla 
or 
Vegan Pizza Tortilla 

Ingredients:
1/2 cup Sliced Green Bell Peppers
1/2 cup Sliced Yellow Onions
1/2 cup of Diced tomatoes

1 Tbsp of Minced Green Onions 
1/2 cup of Shredded Mozzarella Cheese(Optional)
2 Multigrain Tortillas 
1 tsp Sea Salt 
2 tsp of Olive Oil 

Let us Begin 
Place bell peppers and onions in sauce pan with 2 teaspoons of olive oil to sautee.

Add tomatoes towards the end of the sauteing.
While sauteing veggies, crisps the tortillas on a flat pan. Crisp it to your desire.

Then remove the Tortilla and top it off with your sauteed veggies, sprinkle the sea salt... Yummy! 
For the Semi Vegan's: add the Mozz Cheese at the end and it will melt to perfection.

Quick and Easy Lunch or Dinner.
Time:10 minutes
