Carrot Spaghetti Noodles

Carrot Spaghetti Noodles!

Recipe:

3 Carrots Stalks, fully peeled
1/2 cup of minced Onions
1/2 tbsp of Coconut Oil
2 tsp of lemon juice

Pour  Coconut oil in medium heat pan, allow the onions to sauté till desired color,
Then add peeled Carrots, Cook for about 7 mins or till desired tenderness.

Remove from heat, place yummy meal into a bowl  and sprinkle the lemon juice over it. Then, if desired top it off with avocado slices.

Almond Cookies


Freshly Blanched Organic Almonds 

Blend to process into flour 



Raw Honey to sweeten the cookies!

Non GMO Coconut Sugar

Ingredients:
1/2 cup of butter, soft or  coconut oil
1/2 cup of honey
1 egg
1teaspoon of vanilla
1/4 teaspoon of salt
1 teaspoon of baking soda
3 1/2 cups of almond flour
Sprinkles of Coconut Sugar


How to : 
Cream the butter and honey together 
Add the egg, salt, and baking soda to the butter/honey mixture and blend well.
Blend in the almond flour 



Freeze the dough for at least 30 minutes, or up to an hour.
Preheat your oven to 340 degrees F.
Remove from freezer and spoon out your cookie size of choice, place 
on parchment paper, then sprinkle with coconut sugar over the top of the unbaked cookie, and place in preheated oven.

Pretty Colors 

Bake the cookies for about 10 minutes, or until the start to brown along the edges. Be sure to rotate pan of cookies for even baking. 

Let cool off for a few minutes. 
Cookies are done!!

Raw Honey Sesame Pecans

 Sweet Sesame Pecans 


Oh Man!! We fell in love with these on our trip to Dubai.... We ate at a restaurant there, and this was the appetizer they served us. Instantly, we became hooked. It satisfies the sweet tooth and is packed with protein. 

So I recreated this delicious recipe for my son's birthday, and it was a hit!
So Simple and Quick!!





Ingredients:
2 tsp of Organic Raw Honey 
2 cups of Organic Raw Pecans
1 tbsp of Organic Sesame seeds
1 tbsp of Organic Coconut oil 



Heat up the WOK to Medium, Pour coconut oil into the WOK. Then Toss in the pecans to tasted a bit (1-2 minutes) Stir them a few times while toasting. Add Sesame seeds and toast another 1 minute. (You have to stay watching these or else they burn quickly). Remove from heat, pour into a bowl. Then drizzle the raw honey onto the pecans. Mix to spread the honey onto all the pecans. 



Mmmmm, you can eat them warm or save for later! Either way! These have saved me from giving into sweet junk!! lol This is my go to!! 

My kids love it as well!

Ninjabread Battle !!

Ninjabread Battle !!!


I love making Gingerbread cookies this time of year. I have a variety of cookie cutters to choose from; however, I came across these at the store. I fell in love and so did my children. It comes in a kit with mix, but I just used the cookie cutters with my own homemade recipe.

Ingredients:

3/4 cup of packed organic dark brown sugar
1 stick of organic butter, softened
2 large organic eggs
1/4 cup organic molasses
3 3/4 cups all purpose organic flour
2 tsp ground organic ginger
1 1/2 tsp baking soda
1/2 tsp ground organic cinnamon
1/2 tsp organic nutmeg
1/2 tsp salt

Ninjabread Making:
Mix sugar and butter together till creamed then add eggs and molasses. Put your dry ingredients in a separate bowl. Pour flour, ginger, baking soda, cinnamon, nutmeg, and salt in the separate bowl. Mix well then add to wet ingredients and mix well. Then place your ginger dough in the fridge for 30 mins. After 30 mins, take the ginger dough out and begin to cookie cut!!

Bake at 350 degrees on a non greased cookie sheet for 9-11 minutes.

Icing:

1/2 cup of organic confectioner's sugar
1 1/2 Tbsp of water
A few quick shavings of Orange Zest
Mix until smooth and thick

Pour into a Ziploc bag cut the tip and decorate!!

Nourishing the Mind and Body


Reflection is necessary for growth. Shall we remain doing the same things over and over and expect change. 

As our household begins the new homeschool year, I prepare as Mom/Teacher/Wife. I want to honor the Lord with my mind and body. This includes the food I nourish my body with and the knowledge I nourish my mind with. I am in charge of what goes into my children's mind and body. Thus, I have been reading "Educating the Wholehearted Child," by Clay and Sally Clarkson. I am recommending this book to all parents. 

It provides a Godly perspective on the home and the education of your children. It encourages and provides tools for parents. Those seeking to homeschool, it is an excellent book to start with. 

Parents remember, whether you homeschool or public school, You are in charge of what goes in your children. Let us take pride and responsibility in their mind and bodies. Feed them healthy organic fruits, vegetables, and grains, it is the avenue to their bodies health.

Organic Applesauce...An all time fav!

If your home is like mine, your kids love applesauce. Who doesn't? I am always trying my best to  make homemade snacks and meals. Since, my family enjoys eating applesauce, I figured, why not try it?
I used my Crock-pot for this one...




Recipe:
8 cored, peeled, & sliced organic apples
2 tsp of organic lemon juice (from fresh lemons)
1 tbsp of raw organic coconut nectar




Start by turning your Crock-pot to low, then place cored, peeled, and sliced organic apples, lemon juice and coconut nectar into the Crock-pot. Leave for 6 hours on low. Set timer! then allow the magic to happen. Of course Stir it on occasion... 




After the 6 hours are up, remove from Crock-pot and mash or you can puree it in processor. I use my magic bullet for this one. Place in Frig for about an hour or less or you can enjoy it warm as well. 



I bought these silicone icy pop molds, and I use them for all kinds of healthy treats. 



I used them this time for the applesauce.... and it is easy take on the go!!! I just realized I made my own organic buddy fruits lol... The kids enjoy them and so do I!
The remaining portion I place in a glass container. I usually try not to use plastic containers for food. After time, the plastic taste will destroy the yummy taste of foods. So, I don't want plastic to ruin my gourmet applesauce. After all, I worked so hard !! (Not). It was simple just needed some planning time thats all. Make time and you will reap the health benefits of organic eating.

Organic Strawberry Jam

Homemade Organic Strawberry Jam


Tis the Season of Strawberries!!! Feeling Merry Already!! 
I love Strawberries.... Sweet and Satisfies my Sweet Tooth.


This was my first attempt at making Jam... Not a big Jam person but my kids love Old Fashion Peanut Butter & Jelly Sandwiches and topping it on whole wheat pancakes!! So I decided to make it, instead of buying it, like I normally do.

Ok!! So I try my best to stay away from refined sugars etc.... So, I researched ways of making my special strawberry jam more healthier. I used local raw honey and xylitol to sweetened my jam instead of sugar. 

Xylitol is diabetic friendly and helps fight against tooth decay.. great sweetener!! Another Perk: Your body does not process this as a sugar. It does not interfere with blood sugar levels or get stored as fat. Love it


Recipe:
2 cups of Organic Strawberries, sliced
1 cup of Xylitol, non GMO
1 tbsp of Raw Honey (preferably local)
1/4 cup of fresh squeezed lemon juice



Place sliced strawberries into saucepan with honey, xylitol, and lemon on low heat till xylitol is dissolved. Then, increase the heat to medium, until strawberries have a somewhat pureed or dismantled. (Or you can smash them prior to placing them in saucepan)

Then remove from stove top and place in glass jar(with lid) of your choice leaving 1/4 to 1/2 inch headspace, and seal. 

For a more syrup texture, add a little less xylitol.


It was a great hit with my kids!! Enjoy, Buen Provecho!!

Personal Oat Bran Spinach Pita Pizza



One of my children's favorite lunch meals. I love pizza and when I decided to change our family's eating habits, I made the healthy version. Oh, and I added more veggies to it.

There is two ways to do this.....First, you can make your own pita bread from scratch or Second, purchase pre-made pitas from the store. I chose the latter (just for now, until I make my own)

Here are some Nutritional info on this favorite lunch recipe...... 


This is just a preview of what is in this scrumptious personal pizza


Recipe:
1 Pre-made Oat Bran Pita
2 tbsp of seasoned tomato sauce (sea salt, garlic and onion powder) 
(Sometimes, I use my spaghetti sauce)
handful of cut Organic Spinach
Sprinkle of Organic Mozzarella Cheese, shredded
side of Organic Green Grapes

Preheat Oven to 400 degrees, Time to decorate the pita. Spread the 2 tbsp of sauce on pita in a circular motion, sprinkle the cut spinach and top with sprinkle cheese. Place in oven on baking sheet or pizza stone. Wait about 7 minutes or less depends on your level of Crispiness..add side of grapes to plate.....All Done!!! 


It makes four slices; however,  my daughter ate one slice before the pic was taken...Sorry, these are just that good...

There are so many variations you could make with this pita....Breakfast Pita Pizzas or Make it with different toppings....Enjoy! Buen Provecho!!!

Organic Turkey Queso Burgers....Better than Mcdonalds !!!


Organic Turkey Queso Burgers


Yummmo!! I do like Turkey burgers....with cheese!! I do say: I make a better  version of it than Any Fast Food Restaurant... Organic ingredients ensure that chemicals and preservatives as well as Genetically Modified Organism are not in them... You know Good Old Fashioned Food, The way Mamas used to make in the 1950s before the Garbage hit the mainstream grocery markets...


Recipe:
1 lb of Organic Turkey, Ground
1 cup of Organic Onions, minced
1 tbsp Lemon Thyme Spice Seasoning
1tbsp Garlic Powder
4 Organic Sharp Cheddar Cheese, cut into squares
Organic Whole Wheat Bread, Sliced loaves
 1 cup of Organic Spinach
Organic Ground Turkey

Begin by placing ground turkey into a bowl and mashing with hands to crumble. Once ground turkey has been pulverized to mushy texture, add lemon thyme spice, garlic powder and mix with hands again. Be sure to mix the seasonings into all areas of ground turkey... Then add minced onions to the ground turkey bowl. Spread and ensure again, all onions are spread throughout ground turkey.

You may begin forming patty sizes...I made slider sizes.... Excellent size for parties or just lunch boxes.
Place formed turkey patties on skillet , heated to medium and flip until cooked thoroughly. 


Cooked Turkey Burgers

Time to Dress our Turkey Burgers with Cheese (optional: place cheese slices on top of patties prior to removing from heat skillet for a nice melted perk)

Add the Fresh Spinach and Cut the Whole Wheat Slices in Fours (sliders)

Sounds good doesn't it.


 Ezekiel bread is one of the most favored breads of mine. I try to limit my bread consumption to just this brand. My reasoning is they way this particular bread is made. Sprouted grains are optimum in getting the full benefits of the whole grains.

*Sprouted grain breads are significantly higher in protein, vitamins and enzymes, and the complex starches are converted into natural sugars.  They are also low GI (Glycemic index:is a measure of the effects of carbohydrates on blood sugar levels) so they are digested more slowly by the body, keeping the blood sugar levels stable for longer, making people feel more satisfied.  This leads to snacking less.  It is interesting to note that the more highly processed a food is, the higher GI it is.  A loaf of white bread is significantly higher GI than a loaf of sprouted grain bread.

Organic Girly's Juicing Favs!



                  As I mention in previous posts, I love juicing, and I juice almost everyday.

        Fresh Juice, not only aids in health but weight loss as well. Juicing allows the individual consuming the juice to reap all the fresh enzymes in the fruit and veggies. These enzymes aid the body in healing process from everyday free radicals and other health problems. Some may argue otherwise; however, I tend to believe that if it is Fresh it is Best. .... Regardless of what others believe, I choose to juice for myself and my family. We have seen correction in various health issues we had in the past; therefore, I am going by my experiences. That being said, Lets start with some of Organic Girly's  favorite Juicing recipes:

(Of course all produce is Organic to receive the full benefits of the juice)
My daughter's Fav: 2 Apples and 1 Orange

My sons fav: 1 Apple, 1 Orange, and 2 Carrots

My Hubby's fav: 2 Oranges, 1 Apple, 1/2 cup of Cranberries, and handful of Red Grapes

My fav: 2 Kale leaves rolled with Spinach, 2-3 Leaves of Red and Green Cabbage, 1 cup of Cranberries,1 Apple and 2 Carrots.

The great thing about juicing is the variety of juices you can create... Think of juices you love over the counter( kind of sounds like a prescription) and try to recreate them; in addition, add some greens to it and you wont even taste them.

Mmmm Good Organic Waffles


Whole Wheat Flax Waffles

Ingredients:
1 1/2 cups of Organic Whole Wheat flour
2 tsp organic baking powder
1/2 tsp of sea salt
1/4 cup of Organic Apple Juice
1 Large Organic Egg
1 1/2 cups of Organic Whole Milk
 1/3 cup of Organic Coconut Oil
1/4 cup of Organic Flaxseed Meal
2 tsp of Organic Vanilla Extract
3 tbsp of Organic Ground Cinnamon


Mix together dry ingredients: the flour, baking powder, sea salt, flaxseed meal, cinnamon. Then in a separate container, mix wet ingredients: coco oil, milk, egg, juice, and vanilla. Mix together dry and wet ingredients until throughly mixed.
Get your Waffle Iron out , Hot and Prep ready for waffles... Spray your waffle iron with oil spray.. Follow the instructions for your particular waffle iron. Usually when the Waffle iron starts steaming from the sides.... almost done.
  
Then top it off with one of the best syrups I have found without yucky stuff.... Cracker Barrels Syrup ..(Side note: I have tried all kinds of Organic maple syrups and other brands... I still not have not found a syrup that compliments my waffles like Cracker Barrel's brand; it is the healthiest non organic kind I could find.)
