Carrot Spaghetti Noodles

Carrot Spaghetti Noodles!

Recipe:

3 Carrots Stalks, fully peeled
1/2 cup of minced Onions
1/2 tbsp of Coconut Oil
2 tsp of lemon juice

Pour  Coconut oil in medium heat pan, allow the onions to sauté till desired color,
Then add peeled Carrots, Cook for about 7 mins or till desired tenderness.

Remove from heat, place yummy meal into a bowl  and sprinkle the lemon juice over it. Then, if desired top it off with avocado slices.

Raw Honey Sesame Pecans

 Sweet Sesame Pecans 


Oh Man!! We fell in love with these on our trip to Dubai.... We ate at a restaurant there, and this was the appetizer they served us. Instantly, we became hooked. It satisfies the sweet tooth and is packed with protein. 

So I recreated this delicious recipe for my son's birthday, and it was a hit!
So Simple and Quick!!





Ingredients:
2 tsp of Organic Raw Honey 
2 cups of Organic Raw Pecans
1 tbsp of Organic Sesame seeds
1 tbsp of Organic Coconut oil 



Heat up the WOK to Medium, Pour coconut oil into the WOK. Then Toss in the pecans to tasted a bit (1-2 minutes) Stir them a few times while toasting. Add Sesame seeds and toast another 1 minute. (You have to stay watching these or else they burn quickly). Remove from heat, pour into a bowl. Then drizzle the raw honey onto the pecans. Mix to spread the honey onto all the pecans. 



Mmmmm, you can eat them warm or save for later! Either way! These have saved me from giving into sweet junk!! lol This is my go to!! 

My kids love it as well!

Avocados and Black Bean Soup



Black Bean Soup with Avocado slices 
Organic Avocados!

Black Bean Soup Ingredients:
1 tsp of Organic Coriander
2 tsp of Real Celtic Sea Salt 
1 tbsp of Organic Onion Powder
1 tbsp of Organic Garlic Powder
Half cup of Organic potatoes, sliced
1 cup of Pre-soaked Organic Black Beans
1/2 cup of organic tomato sauce

Cook in pot for 30 minutes in medium low, stir occasionally
(Also, great in a crock pot)

Pour into a bowl and top it off with sliced avocados
and

Food: Friend or Foe!!


It is unfortunate that many people aren't aware of the addictive properties of processed foods. More specifically, it is genetically engineered foods that are greater in damage. It is saddening that many children are acquiring diseases that are normally seen in adulthood. What is the cause of this ? How is it many people are blinded by the importance of a basic need? Which is Food! Food can be a a good friend or a backstabbing enemy!! Which will you choose? 
Question all information given to you by Mass MEDIA!! Commercials !! Advertisements!! 

It is all a ploy to addict consumers and create long life customers(which do not live very long)!!

I encourage you to become informed. Take the responsibility of teaching yourself and family a clean way of eating. Health is priceless! We see a rise in preventable diseases due to the foods we consume. Be proactive and you will see a change in health over time. Let us not become complacent in doing what is right!

Organic Applesauce...An all time fav!

If your home is like mine, your kids love applesauce. Who doesn't? I am always trying my best to  make homemade snacks and meals. Since, my family enjoys eating applesauce, I figured, why not try it?
I used my Crock-pot for this one...




Recipe:
8 cored, peeled, & sliced organic apples
2 tsp of organic lemon juice (from fresh lemons)
1 tbsp of raw organic coconut nectar




Start by turning your Crock-pot to low, then place cored, peeled, and sliced organic apples, lemon juice and coconut nectar into the Crock-pot. Leave for 6 hours on low. Set timer! then allow the magic to happen. Of course Stir it on occasion... 




After the 6 hours are up, remove from Crock-pot and mash or you can puree it in processor. I use my magic bullet for this one. Place in Frig for about an hour or less or you can enjoy it warm as well. 



I bought these silicone icy pop molds, and I use them for all kinds of healthy treats. 



I used them this time for the applesauce.... and it is easy take on the go!!! I just realized I made my own organic buddy fruits lol... The kids enjoy them and so do I!
The remaining portion I place in a glass container. I usually try not to use plastic containers for food. After time, the plastic taste will destroy the yummy taste of foods. So, I don't want plastic to ruin my gourmet applesauce. After all, I worked so hard !! (Not). It was simple just needed some planning time thats all. Make time and you will reap the health benefits of organic eating.

Fresh Tomato Basil on a Wheat Roll



Tomato Basil on Wheat
So I went Vegan tonight... Not in the mood for any kind of animal today, lol 



So remember those Whole Wheat Dinner rolls I made.. I made a bunch,  so needed to use them before they started to mold.  Yummy... I toasted the rolls in my cast iron then topped off with tomato and basil.



Ingredients: 
Organic Whole Wheat Rolls, sliced in half's (homemade recipe link above)
Organic Tomato, sliced thin
Fresh Organic Basil leaves
Sprinkle of Sea Salt and Organic Black Pepper




Warm your Cast iron pan to med low. Toast bread slices first till desired crispyness. Then place sliced tomatoes to sear for a few until desired browning.  Then top the rolls with tomato and basil leaves and sprinkle the tomato and Enjoy!!

Optional topping of Mozzarella for those of you who love cheese!!!

Sauté Garlic with Spinach




I love the taste of garlic... and I love raw Spinach.... Perfect combination.
It is a healthy snack, I usually prefer this in the evening as a treat. I know I'm weird, but thats okay!!

Ingredients:

1/2 cup of Minced Organic Garlic
1/2 Organic Lemon
Handful of Raw Organic Spinach, cut 
1 tsp of Sea Salt
2 tsp of Organic Olive Oil 

Coat pan with olive oil and allow pan to heat to med-low heat. Then place minced garlic in pan and sauté garlic till golden brown and add raw spinach for a few seconds and mix. Then remove from pan and place in bowl. Squeeze lemon over garlic and spinach and sprinkle with sea salt.

Red & Green Lentil with Barley Soup


One of My favorite soups... Lentils with Barley Soup 


Barley 

Ingredients:
1 cup of Red Lentils, uncooked
1 cup of Green Lentils, uncooked
1/2 cup of Barley, uncooked
2 Quarts of Veggie Broth or Chicken Broth 
1 cup of raw onions, minced
1 cup raw carrots, minced
2 tbsp garlic powder
2 tbsp onion powder

Toasted Bread:
Sliced bread of your choice
Coat fry pan with olive oil on med temp,  sprinkle seas salt and garlic powder onto fry pan and place sliced bread to toast, remove when desired crispiness..
Perfect for soup diving...


In a slow cooker (crockpot), combine all ingredients in the stoneware of slow cooker. Place on low temp and cook for 4-5 hours, with occasional stirring and checking for broth absorption by lentils and barley. If needed add water until desired. 


All raw ingredients in the soup, initial start 

On a stove, combine all ingredients in a large pot. Place temp on med-low to med... and allow cook for 1 hour 30 mins. On the stove, the pot must be watched closely for burning on the bottom of the pot. 

I prefer crockpot for my soups.. Set it and forget it lol

Olive oil toasted sliced bread with herbs..


I make this soup in bulk and freeze for later days.... That way I have lentils soup when I am in the mood. This helps stock up my freezer with quick meals for the family..

Cafe con Leche (Cafe Espresso)

Cafe con Leche 
The classic cafe can be used to help with energy; however, as with everything, it must be in moderation. I have enjoyed this type of cafe since I was a little girl. My grandmother (mi Abuela), used to make this for us for breakfast (yeah, not the healthiest, I would say, but with some Cuban bread and butter, we were happy kids). 
 
I would say to add this to your healthy lifestyle, cut out the Cuban bread and butter....and just stick with the Cafe con leche. You could drink this with a bran muffin or a much healthier substitute. 

Organic Cinnamon (Canela organica)

I like to add a little bit of organic cinnamon to my Cafe con leche...It adds a pinch of spice..Which I love. Try it!!

I use a Stove top Espresso Maker (old school style, I prefer it).The measurements for ingredients are dependent on the size of espresso maker used. So follow quantity suggestions per maker.

Ingredients:
Organic Espresso Roast: I would use the Organic Espresso Roast or Fair trade Espresso roast to minimize your exposures to Genetically Modified Organisms in crops as well as pesticides.
Organic Milk(either Organic Almond or Coconut Milk)
 
 
 Xylitol or Stevia to sweetened your cafe
1tsp of Organic Cinnamon (canela organica)
 
Recipe:
1 shot of Organic Expresso
1 cup of Organic Milk
3 tsp of Xylitol or 2 tsp of Stevia

Use Espresso maker to create your tasty Espresso. Place a small pot on stove top with med low heat. Add Already made Espresso, milk, and your choice of Xylitol or Stevia to the mix and stir until desired temperature.

*Stay away from processed sugars as much as possible, this is why I omitted it from the recipe. These sweeteners do not interfere with your blood sugar levels (I am not a physician, but I have read the studies on the importance of a balanced pancreas functions).

Strawberries!!! How good are they ???

Sweet Sweet Strawberries!!! Especially Sweeter when they are Organic. Unfortunately, Strawberries that are not grown organically have been tested and proven to have 54 different pesticides  from the strawberry farmers chemicals pest solutions. The Organic Consumer Association ranks non organic strawberries to be number one out of all the fruits grown with commercial farming practices. Fortunately, when strawberries are in season purchase Organic... look for the label USDA Organic.

*Organic Strawberries are High in Vitamin C. 1 cup of Organic Strawberries packs 160% of your recommended Vitamin C value. It is only 50 calories a cup full.
Other Perks:
Fiber 2.5 g
Protein .96 g
Potassium 220 mg
Folate 35 mcg
Vitamin A 17 IU
Calcium 23 mg


In addition to all this wonderful knowledge about Organic Strawberries,  they are high in antioxidants. Antioxidants fight off cancer cells that are present in your body. It aids in the removal of them and cleaning. Here is a perk: the antioxidants help with the beautification of your  skin....It is complimentary for the health of your skin as well.

There are tons of recipes for Organic Strawberries. Just to name a few: Strawberry Jam (made with Xylitol, in stead of sugar). (Xylitol is a natural sweetener that comes from fibrous vegetables and fruits). Strawberry Sorbet, Goat Cheese and Strawberry Bruschetta (I will be posting this recipe soon)...

Spinach, Tomato, and Hummus!!

If you are like me, You love Hummus. I try to incorporate Hummus into everything I eat. Ofcourse, this is not successful everytime...Yucky, oatmeal and hummus not a good combination. Although, I do love them separately. 





Health Benefits of Hummus:
High in Fiber and Protein, Folic acid

Spinach, Tomato, and Hummus on Five Grain Sourdough  Bread

Ingredients:
1/2 cup of sliced Organic Tomatoes
1/2 cup of Organic Baby Spinach
2 Tbsp of Organic Hummus
Sprinkle of Sea Salt


Toast the Sour Dough bread slice, after removing bread from the toaster spread hummus  onto bread slice, then top it off with the baby spinach and tomatoes...Sprinkle sea salt to add a little bit more flavor.

*This is a Vegan Meal...and it keeps you full for several hours..

Sounds good doesn't it.


 Ezekiel bread is one of the most favored breads of mine. I try to limit my bread consumption to just this brand. My reasoning is they way this particular bread is made. Sprouted grains are optimum in getting the full benefits of the whole grains.

*Sprouted grain breads are significantly higher in protein, vitamins and enzymes, and the complex starches are converted into natural sugars.  They are also low GI (Glycemic index:is a measure of the effects of carbohydrates on blood sugar levels) so they are digested more slowly by the body, keeping the blood sugar levels stable for longer, making people feel more satisfied.  This leads to snacking less.  It is interesting to note that the more highly processed a food is, the higher GI it is.  A loaf of white bread is significantly higher GI than a loaf of sprouted grain bread.

Organic Girly's Juicing Favs!



                  As I mention in previous posts, I love juicing, and I juice almost everyday.

        Fresh Juice, not only aids in health but weight loss as well. Juicing allows the individual consuming the juice to reap all the fresh enzymes in the fruit and veggies. These enzymes aid the body in healing process from everyday free radicals and other health problems. Some may argue otherwise; however, I tend to believe that if it is Fresh it is Best. .... Regardless of what others believe, I choose to juice for myself and my family. We have seen correction in various health issues we had in the past; therefore, I am going by my experiences. That being said, Lets start with some of Organic Girly's  favorite Juicing recipes:

My daughter's Fav: 2 Apples and 1 Orange

My sons fav: 1 Apple, 1 Orange, and 2 Carrots

My Hubby's fav: 2 Oranges, 1 Apple, 1/2 cup of Cranberries, and handful of Red Grapes

My fav: 2 Kale leaves rolled with Spinach, 2-3 Leaves of Red and Green Cabbage, 1 cup of Cranberries,1 Apple and 2 Carrots.

The great thing about juicing is the variety of juices you can create... Think of juices you love over the counter( kind of sounds like a prescription) and try to recreate them; in addition, add some greens to it and you wont even taste them.

Organic Baby Spinach & Couscous Cucumber Salad



Ingredients:
Handful of Organic Baby Spinach
1 Freshly Shredded Organic Carrot
1/2 Organic Cucumber, sliced
1/4 cup of Organic Couscous
1 tbsp of Newman's Own Light Balsamic Vinaigrette






Place baby spinach, shredded carrots, sliced cucumbers in a bowl. Then top off with couscous and vinaigrette.
